The trade name Orsatti has figured strongly in the town ever since 1860 transforming the production of Ferrarese bread making to a sublime art, a milestone in the culinary tradition of our province. Since the fifties the frenetic activity and intuition of Luciano Orsatti have constituted the beginnings and the driving force of a radical transformation of the traditional “bottega”.
Under his direction, the bread shop also became a pastry shop, with the rediscovery of the Pampapato, a traditional cake on the Estense Court table.
Today the Orsatti Group is a great enterprise which has been able to keep the original artisan methods in its production.
As they approach their one hundred and fiftieth anniversary, the trade name of Orsatti is still considered by gourmets to be the symbol of bread making , pastry making and Ferrarese gastronomic delights. |
PAMPAPATO (The Bread of the Pope)
It was created in the sixteen hundreds by the enclosed nuns and is shaped like the Pope’s ecclesiastical zucchetto.
The dough consists of flour, sugar, honey, almonds, orange rind, spices and cocoa.
It is baked in the oven and then covered in high quality dark chocolate.
MANDORLINI BRIDGE CAKES
Little almond cakes named after the bridge over the Po River which joins Emilia Romagna with the Veneto at Pontelagoscuro.
Skinned almonds, egg white and sugar are the ingredients which make up this soft mixture which takes on various shapes during the baking process depending on how the almonds are placed. In this way each cake has its own particular shape. |
